FAVORITE - Summer Salad

Do you enjoy the summer just like me! Therefore, I would love to share my couscous salad. It is me favorite salad since my wine tour through the Alsace in France with school in 2010. This salad can be prepared within 15 minutes, so it is easy and fast, next to that it is healthy and you can bring it to work as lunch.
Do you enjoy the summer just like me! Therefore, I would love to share my couscous salad. It is me favorite salad since my wine tour through the Alsace in France with school in 2010. This salad can be prepared within 15 minutes, so it is easy and fast, next to that it is healthy and you can bring it to work as lunch.
The recipe for 4 persons:
- 2 cups of couscous
- 100 gram Feta
- 4 parts of Fresh Mint
- 4 parts of Fresh Basil
- 100 gram black Olives
- 100 gram of sun-dried tomatoes
- 2 table spoons of pine-nuts
- 1 red Onion
- Olive oil
Equipment:
- Pan to boil water
- Frying pan
- Hatchet
- Choppingboard
- Salad dish
Workout:
Cut the basil and mint in small pieces. Slice the black olives, sun-dried tomatoes, feta and onion and all in the salad dish. Fried the pine-nuts slowly till they are light brown and leave them to cool down. Take a small pan and add one cup of water(approx. 300 ml) and a table spoon of olive oil to avoid a sticky couscous. Boil the water and add the couscous, swirl in the meantime for approx. one minute. When it is properly cooked add it in the salad dish and swirl everything together. Of you like the couscous a little bit more greasy add bit of the olive oil.
In this salade you can add also a bit pomegranate or chicken.
I would serve this dish with a cooled Pinot Grigio from Italy.
