Pavlova - Christmas Dessert

A family tradition is an unique moment that you share with your family or friends, this tradition becomes a part of each others lives and keeps coming back every year. Often we have more traditions than we are aware-off. Within my family we have traditions, as well as with my boyfriend. I feel wealthy during these days because it brings family and/or friends closer together.

My boyfriends family has their own tradition during Christmas time. Every year with Christmas each family member or a couple needs to prepare a starter, main dish, dessert or small bites which we consume throughout the day. Last year I made Pavlova together with my boyfriend. Pavlova is made from egg-white only. When you start to make pavlova you need to separate the egg-yolk from the white. The next technique is to stir the egg-white with sugar to create the whipped egg-white see below (picture 1).


For Pavlova you need the following ingredients:

Recipe for 6 persons:
4 egg white
1 table spoon with lemon
200 g super fine sugar
1 table spoon cornflour
250 g whipped cream
400 g fresh fruit to add on top
50 g nuts
a bit of sugar to add on top

Workout:
Preheat the oven to 120 degree celsius. Rasp one lemon and squeeze it. Separate the yolk from the egg-white and throw the yolk away. Take a large bowl and clean it very well, make sure it is dry too. It is preferable to use an electrical mixer to swirl the egg-white with the sugar. It can take a while before the egg-white is stiff and shinny. While you are mixing the egg-white add slowly the 200 gram off sugar. When you are ready, you take the end of a spoon and if the whipped egg-white will stick to it and if you can make small peaks then your work is done. The remaining thing to do is to add the cornflour, 1 spoon of lemon rasp and 3 table spoons of lemon juice and swirl everything together.


In the mean-time take a plate which you put in your oven, line it up with foil. When the egg-whites are stiff and shinny add it on the plate and start in the middle. Please check picture 1 as an example. Bake the Pavlova in one hour. When the oven is too hot change it to a lower degree or open the oven for a bit. Your pavlova will turn yellow on the top when the oven is too hot.

During the time that your egg-white is in the oven you can prepare all the fruits, nuts and whipped cream. Take your Pavlova out of the oven and wait till it is cooled downed, add the whipped cream (ice can also be added on top), the fruits and nuts on top.
